Fresh Roasted Asparagus & Vegetables


  • 1 pound McGregor's asparagus
  • 2 medium red peppers
  • 1 large sweet potato
  • salt and pepper to taste
  • 2 tablespoons olive oil

How to Make:

  1. Make thick slices of sweet potato and cut slices into quarters, then toss in one tablespoon olive oil
  2. Place in pan and bake at 375F for 15 minutes
  3. Clean and cut red peppers into large chunks, trim asparagus and cut into two inch pieces, toss in remaining olive oil
  4. Remove sweet potato from oven and add red peppers and aspargus
  5. Bake for another 25 to 30 minutes, until all cooked
  6. Serve warm, goes great with chicken
