Ingredients:
- 1 pound McGregor's asparagus
- 2 medium red peppers
- 1 large sweet potato
- salt and pepper to taste
- 2 tablespoons olive oil
How to Make:
- Make thick slices of sweet potato and cut slices into quarters, then toss in one tablespoon olive oil
- Place in pan and bake at 375F for 15 minutes
- Clean and cut red peppers into large chunks, trim asparagus and cut into two inch pieces, toss in remaining olive oil
- Remove sweet potato from oven and add red peppers and aspargus
- Bake for another 25 to 30 minutes, until all cooked
- Serve warm, goes great with chicken
