This recipe is perfect for creating fresh cocktails, mocktails, desserts and lemonades while enjoying a fresh rhubarb flavour.
Ingredients:
- 3 Cups Chopped Rhubarb
- 2 Cups Water
- 1 1/2 Cups Sugar
How to Make:
- Combine water and rhubarb in a saucepan
- Bring to a boil, then lower heat and simmer for 20-25 minutes
- Use a fine mesh strainer over a bowl and pour the mixture over the strainer (do not press on fruit)
- Return the infused water to the saucepan and add the sugar. Bring to a boil for five minutes making sure all sugar is dissolved
- Once cooled, store in a sealed container for up to one week in the fridge
- Enjoy!
