Rhubarb Simple Syrup

This recipe is perfect for creating fresh cocktails, mocktails, desserts and lemonades while enjoying a fresh rhubarb flavour. 


  • 3 Cups Chopped Rhubarb
  • 2 Cups Water
  • 1 1/2 Cups Sugar

How to Make:

  1. Combine water and rhubarb in a saucepan
  2. Bring to a boil, then lower heat and simmer for 20-25 minutes
  3. Use a fine mesh strainer over a bowl and pour the mixture over the strainer (do not press on fruit)
  4. Return the infused water to the saucepan and add the sugar. Bring to a boil for five minutes making sure all sugar is dissolved
  5. Once cooled, store in a sealed container for up to one week in the fridge
  6. Enjoy!
