Sponge Cake for Strawberry Shortcake

Ingredients:

  • 2 eggs
  • 1 cup white sugar
  • 1 tsp vanilla
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1tbsp butter

How to Make:

  1. Preheat oven to 350F.  
  2. Beat eggs in a mixing bowl until frothy.  Add sugar gradually while beating, until thick.  Add vanilla.
  3. Combine flour, baking powder and salt.  Stir into egg mixture.
  4. in a small saucepan, heat the milk and butter until hot.  Stir this into the batter.
  5. Spread into a greased 9"x9" cake pan.  Bake for 25-30 minutes; until a inserted wooden pick comes out clean.
  6. Serve with fresh strawberries and whipped cream (or ice cream) and ENJOY.

*Note:  This recipe can easily be doubled and baked in a 9"x13" pan.  This cake also freezes really well to serve another time.
